While sharpness is essential, it’s not the only factor that defines a quality knife or effective sharpening. A knife can be razor-sharp, but still underperform if other key elements are overlooked.

Edge geometry plays a huge role. The angle and shape of the blade determine how the knife cuts and how long it stays sharp. A poorly shaped edge, even if sharp, can chip easily or dull quickly.

Blade steel also matters. Different steels hold edges differently—some stay sharper longer, while others sharpen easily but require frequent maintenance. Sharpening without understanding the steel can lead to poor edge retention or even damage.

Consistency and balance are important too. Uneven sharpening can create high spots or unbalanced blades, affecting control and cutting precision. A "sharp" edge that isn't uniform won’t perform well over time.

Lastly, purpose matters. A knife sharpened for slicing tomatoes isn’t the same as one prepped for breaking down meat. The right edge must match the job.

In short, sharpness is just the start. For a knife to perform at its best, it needs the right edge, steel, geometry, and purpose-specific sharpening.


 I operate out of City Beach and frequent both the Mt Claremont and Subiaco Markets

 I have extensive experience as a knife sharpener, working with a variety of blades including kitchen knives, hunting knives, and specialty tools. Over the years, I’ve honed my technique using both traditional whetstones and modern sharpening systems, ensuring precise angles and consistent edges. I understand how different blade steels respond to sharpening and tailor my approach accordingly. My focus is not just on creating razor-sharp edges, but also on preserving the blade’s longevity. Whether it’s restoring a damaged edge or maintaining a fine finish, I take pride in delivering sharp, reliable tools that perform safely and efficiently. 


 I have a variety of tools that I use depending on the knife/tool and the service required. I use both Swedish and German wet stone grinders, custom made belt sanders with sewing machine variable speed motors running 3m belts, bench top polishing machines and a bench grinder with linishing attachments for heavy garden tools and machetes. 


 

I sharpen a wide range of blade types, each requiring a tailored approach to ensure optimal performance and longevity. Here are the main types I work with:

  1. Kitchen Knives – Chef’s knives, paring knives, bread knives (serrated), santokus, and specialty blades like boning or fillet knives.
     
  2. Pocket & Folding Knives – Everyday carry (EDC) knives, multitools, and tactical folding knives.
     
  3. Hunting & Outdoor Knives – Fixed-blade knives, skinning knives, and survival tools, often requiring tough, field-ready edges.
     
  4. Serrated Knives – Special techniques are used to restore each tooth while preserving the serrated pattern.
     
  5. Scissors & Shears – Including kitchen shears, fabric scissors, and grooming tools.
     
  6. Machetes & Axes – Heavier-duty blades used for chopping and bushcraft, sharpened for durability and function.
     
  7. Utility & Craft Blades – Box cutters, hobby knives, and specialized cutting tools.
     
  8. Japanese Knives – Single-bevel and double-bevel edges like yanagiba, usuba, and gyuto, which require precision and specific angles.
     

Each blade type demands unique attention to steel hardness, edge geometry, and intended use, ensuring the sharpening process enhances both performance and safety.

 I operate a popup store fortnightly alternating between the Mt Claremont and Subi markets.
